  • And I almost NEVER buy non-house-wine at a restaurant. It's just not worth it IMHO. The mark-ups on wine bottles are crazy. At least here in Germany, the house wine at any self-respecting Italian, Spanish, Greek or whatever Mediterranean restaurant will be good. Maybe cheap, but good. Same if you go to actual Italy, Spain or Greece. Never have been disappointed by just asking for a glass of wine. It will almost be some honest good stuff. If you really want to indulge, buy yourself a good bottle at the supermarket and drink it at home, and avoid the times-four-or-more mark-up.

  • Sauce hollandaise of course belongs on white asparagus. That's where it shines. (Why would you put it on eggs? There is already egg in it! But well -- if you like it, go right ahead, even if it sounds strange to me.) And most commercially made sauce hollandaise is made from pasteurized eggs so perfectly safe to eat. But it is true that improbably made sauce hollandaise can give your tummy a really rough ride.

  • 1 restaurant is primarily a steak house, 60 miles from me, but they offer seafood, whats funny is they do not cook seafood, there is a great seafood place in same area, in sight of, they have seafood menu, along with theirs, so when you order seafood, they call the seafood shop, & it gets delivered to your table, from seafood place, there is no upcharge, they give you the ticket, which is normal price, so you pay the steakhouse, so hopefully your family will eat there, but if someone wants seafood, no problem, if you have issue with seafood, person will come back to talk to you to correct, very professional place, just always thought odd, but they specialize in steaks. just they want everyone to eat there, no other arrangements with any other food places

  • The restaurants I go to and order eggs benedict only serve eggs benedict for a limited time (a couple hours tops) on the weekends and I never had a server say you don't want to order that or anything to that sentiment. It's because they'll let me know if it's something they are out of.

  • I’ve worked in hospitality for over 30 years. Currently I’m working in a restaurant in Adelaide, South Australia called La Trattoria. We only use fresh bread! Our specials are because we have so many regulars that we put specials up onto the board because it’s good & the customer doesn’t get bored with the food! Not because we want to get rid of old stock! We’re so busy that stock doesn’t go off! We occasionally run out of stock, like oysters, tiramisu etc...I realise some places maybe like this but thankfully non of the restaurants I’ve ever worked in are like this, otherwise I’d quit working for people like that!

  • Well done steak. NOPE! I order a steak, I always tell the server "as rare as you're allowed to serve it". I make steaks at home I get the pan (or grill) raging hot, maybe a minute on each side, just char the outside, it kills that nasty (maybe), you're left with tender wonderful inside.

  • While I've never served swordfish, if I couldn't recommend a menu item to a customer for fear of a health risk, I wouldn't work in that restaurant. Water with lemon? A well-done steak? This sounds like a bitter restaurant professional that doesn't want to serve a certain type of crowd. If you sit down at a restaurant and the front of house is clean and organized, chances are the back of house is as well. You'll be just fine at like 95% of the places you can Yelp.

  • I've never been overly concerned about some of the contamination issues mentioned in this video; I've always had a strong stomach. I'm starting to feel a little more concerned about these things now, though, after the COVID lockdowns. I haven't been eating at restaurants regularly for the past year, so I'm not sure if my immunities are still up to snuff. They might be, though... my own kitchen is not exactly the cleanest place on the planet. As far as steaks go... I like them cooked Medium. I like my meat to have a firm texture all the way through. A little bit of pink in the middle is nice, as is a little extra charring on the outside. Firm, some pink, some charring... that, to me, is a perfect steak. Also, by asking for Medium... if it's a little undercooked, or a little overcooked... I'm still fine with it! It'll still be within the general range of what I like in a steak.

    • A lot of this stuff is for Europe. Here coffees are made to order. I've not seen milk in pitchers in the U.S. As far as appetizers go, that's usually the most interesting part of the meal. It's a shame that Americans can't be more creative with appetizers. She's right about salad bars--I avoid them like the plague. Bread is another bad American custom. Why stuff yourself with bread before your oversized entree even shows up? Garnishes are not only reused but sometimes improperly washed. I've eaten plenty of swordfish--no issues there. I could never finish an entire bottle of wine. I always buy the glass.

  • I worked at a Chinese buffet, they take the crawfish and mussels off peoples plates in the kitchen, place then in a tray of warm water for 30 minutes, and they head back to the buffet. If you see a discolored crawfish or mussel, stay away! It was on the plate of the guy walking out when you arrived. They ALL do this..! You've been warned.

  • Where are these people working man? I spent 10 years in the restaurant industry. We always used tongues for lemons, even shrink wrapped the tray. Cleared the salad bar, drained all the ice every night. Reusing bread baskets will get you fired on the spot.

  • This definitely depends on the restaurant. I worked in the food industry for over 20 years. Health restricions are so strict that the restaurant would be shut down in a heart beat for many of these foul practices.

  • Definitely if you go to a cheap place or a place without an open kitchen/working area, these are good tips. I previously worked at a cafe with an open bar and we do steam milk. The baristas always rinse every milk pitcher after 1 use and have done so consistently for the entire 4 years I've worked there.
